Classic Semperit Recipe:
Ingredients:
250g butter
¾ cup / 90g icing sugar
1 egg yolk
1 teaspoon vanilla extract
1 cup / 120g custard flour
1 cup / 120g corn flour
2 cups / 250g plain flour
Red and green cherries (for decoration)
Preparation:
Cut red and green cherries into small pieces.
Grease baking trays and line them with parchment paper.
Cream Butter and Sugar:
In a large bowl, cream the softened butter.
Add icing sugar and mix until well combined but not too long.
Add Egg and Vanilla:
Add the egg yolk and vanilla extract to the butter-sugar mixture. Mix until well combined.
Mix in Flours:
Add custard flour, corn flour, and half of the plain flour. Mix until well combined.
Then, gradually add the remaining plain flour while continuously mixing until the dough becomes smooth.
Rest the Dough:
Rest the dough for a short while.
Knead and Decorate:
Knead the dough until smooth and pliable.
Use a semperit mold to shape the dough into desired forms.
Decorate each cookie with pieces of red and green cherries.
Bake:
Preheat the oven to 160°C.
Bake the semperit for 15-20 minutes or until they turn golden brown.
Monitor the baking process and adjust the temperature according to your oven type.
Serve:
Allow the semperit to cool before serving.
Tips:
Use pure butter for better flavor.
Ensure the butter is softened but not melted before using.
Sift icing sugar if it’s lumpy.
Avoid overmixing the dough.
If the dough is too dry, add a little softened butter and knead again.
Rest the dough under a cloth to prevent drying while making the cookies.
To maintain the shape of the semperit, ensure the dough is dry and firm before baking.
